Odia cuisine exudes simplicity and delectability both at the same time and there couldn't have been a better proof than "Kakharu Phula Bara" or the Pumpkin Flower Fritters. One of the most loved side-dishes cooked in an Odia kitchen, it is yet another example of how humility can win over a thousand hearts! It is prepared by dipping the pumpkin flower in a batter of either gram flour (besan) or that of the rice flour and then shallow frying them on a tawa. Usually the male flowers of a pumpkin plant are used for these fritters as the female flowers would grow into edible pumpkins.
