Gobi Aalu Masala |
Now that winter is in its last phase, I thought of preparing something that would involve one of my favourite winter vegetables - Cauliflower. So I made Gobi Aalu Masala for lunch today. It's a rich and spicy, gravy based curry in which cauliflower and potatoes are sauteed with Indian spices to prepare this delectable dish. Pair this dish with either rotis or paranthas or puris or even with steamed rice , the gobi dish goes well with each of them. (Ignore the excess amount of oil and fat floating on the surface. Sometimes it's okay to give in to heart's desires! :P)
Preparing Gobi Aalu Masala is fairly easy, anyone, even a novice, can make it and tastes absolutely lip-smacking if done the right way.
1. First of all, one needs to cut the cauliflower into medium sized florets and wash them nicely in water and then keep them aside.
2. Similarly about 2 medium sized potatoes are to be washed clean and peeled, then cut into big sized cubes.
3. 2 medium sized onions need to be sliced while another small sized onion needs to be chopped into small pieces. These small sized onions along with about one inch long ginger piece and around 5-6 garlic pieces are to be made into a fine paste.
4. 2 medium sized tomatoes too need to be chopped finely into small pieces.
5. Apart from these ingredients, we need 1 bay leaf, 1 teaspoon of turmeric powder, 1 teaspoon of cumin seed powder, 1 teaspoon of red chilli powder, 1 teaspoon of coriander powder, 1 teaspoon of garam masala powder, 1 black cardamom and one half inch long cinnamon stick.
6. So to start with, heat about 2 tablespoon of refined oil in a kadhai and shallow fry the cauliflower florets till they are almost golden brown. Keep them aside.
7. Similarly now shallow fry the potato cubes and keep them aside.
8. Now in a pressure cooker, heat about 1 tablespoon of oil and add the whole spices like bay leaf, black cardamom and cinnamon stick.
9. Then add the sliced onions and saute them for a minute or two till they turn translucent. Now add the chopped tomatoes and saute them as well till the raw smell goes away and they turn mushy.
10. Add the ginger-garlic-onion paste and stirring continuously saute the paste for another 3-4 minutes till the masala starts leaving oil from the sides.
11. Now add turmeric powder, cumin powder, coriander powder and red chilli powder and mix them nicely into the sauteed masala adding a little amount of water.
12. After a minute of stirring and cooking, now add the fried cauliflower florets and the potatoes and mix nicely.
13. Add the amount of water you want in the gravy depending on the amount of cauliflower and the poatoes (about one and a half cups will do), add salt and garam masala powder and closing the lid, keep it on low-medium heat till you get one whistle. Now turn off the gas and leave it for about 5 minutes so that the steam inside the cooker dies down on its own.
Gobi Aalu Masala is now ready to be eaten :D
