Kheer or rice pudding made using milk is a very popular and commonly prepared sweet dish across India and other parts of Asia. But the Rice Kheer made in Odisha is markedly different from those made in other parts in that, here the use of caramelized sugar in the beginning of the process lends a rich creamy texture apart from a distinct flavour. Such Kheers are especially prepared and served in wedding parties and other such major functions.

Different people have different tastes, some prefer to eat kheer while it is still hot while some others like me prefer to eat cold kheer. In fact I have enjoyed eating the "basi kheer" the most i.e. having it the next morning. Of course it's not that I let go my share yesterday :P Noooo.. never. impossible. I had eaten to my heart's fill last night as well. But I have always felt that the kheer tastes even better after having been left in the refrigerator overnight. Well, to each his own!
