Dutia Osha Ghanta Tarkari or Dwitiya Ghanta |
Although Ghaanta Tarkari (or mixed vegetables curry) is commonly prepared in the Odia kitchens throughout the year, but it is specifically prepared on the day following Dutia Osha or Duti Bahana Osha and therefore is also known as Dutia Ghaanta. To prepare this authentic Odia dish, 21 varieties of vegetables are used along with soaked pulses and legumes. However, since we could not find some of the traditionally used vegetables, we had to use tomatoes, french beans and potatoes. Onions or garlic are strictly avoided.
