Manjaa Rai Baati Basaa (banana stem fry) is a typical Odia speciality prepared regularly in most households in Odia families. It's a side dish and can be taken with both rotis as well as steamed rice but we Odias prefer to have it with rice.
The stem of a banana plant is finely chopped and then cooked with few Indian spices wrapped in a banana leaf and cooked on an earthen fire (chulha). I have added finely chopped potatoes too. I wish I was in a village, I don't have an earthen fire pot here but I managed to cook it in a kadhai on the usual gas burner but it still came out perfectly fine.
