We had a sumptuous lunch today that included peas rice, butter smeared rotis, kheer but the main attraction was Paneer Latpat. It was rich, spicy, little tangy and absolutely yummylicious!

The method of preparing Paneer Latpat is fairly simple. To prepare the gravy, I used cashew nut paste, coconut milk and kasuri methi, apart from the usual ginger garlic paste, tomato puree and the medley of Indian spices. What one has to keep in mind is the right proportion of the ingredients based on the quantity of paneer (cottage cheese) being used.
